I'm by far a novice when it comes to canning. Past years, I blanch and freeze(or we eat very quickly!) so this has been a whole new learning process for me.
Thanks to an abundance of cucumbers, we obviously are making pickles.
Lots of pickles.

With 1 1/2 of our cucumbers, I made 2 quarts of refrigerator pickles. I had some liquid leftover and not wanting to waste, I quickly made up some pickled poblano peppers.
Joseph's boss went away over Labor Day weekend and brought us a 25 pound box of peaches
We made quick work of eating a lot but had some I didn't want to go bad. I scoured the internet and found a fairly easy recipe for peach preserves, so I made a batch!

And lastly, since Joseph brings home a Walmart size bag of tomatoes every week, I used up some to make salsa.

I had planned on making relish, but Thing 2 cut up one cucumber for a snack yesterday, Baby Girl took one to the neighbor, and Joseph gave 3 to a guy he works with.
No worries, I'm sure they'll be coming out of my ears again next week!
I have to admit, it's kind of nice to can. It hasn't been cheap, we had to buy jars and stuff like salt and pickling spice but next year should be cheaper!
